Coconut Lime Cookies


I love to pack a few wholesome, homemade cookies in my kids' lunch boxes every day. It's nice to have a sweet treat halfway through a long day at school--and when I make that sweet treat, I know exactly what is going in their mouths! This recipe is loosely based on one I found on Pinterest-- from The Girl Who Ate Everything. Although, if you know me at all, you know I can't leave well enough alone. I have altered the original recipe quite a bit to make it, well, healthier of course--and I added a lot of coconut, because it is yummy!! These almost have the texture of macaroons. Lots of coconut and a hint of lime? Bring on the summer!!

Coconut Lime cookies

2 cups white flour

3/4 cup whole wheat flour

1 tsp. baking soda

1/2 tsp. baking powder

1/2 tsp. salt

1/2 cup butter, melted

1/2 cup applesauce

1/2 cup sugar

1/2 cup honey

1 egg

1/2 tsp. vanilla

4 TBSP lime juice

3 cups toasted coconut

sugar for rolling cookies

1. Spread coconut out on a cookie sheet and bake at 350 degrees for 5 minutes to lightly toast it. Leave oven on!

2. Mix all ingredients together.

3. Roll dough into small balls and roll balls in sugar.

4. Place on sprayed cookie sheet and bake at 350 for 8-10 minutes. Cool and eat!

FIT kid rating: 4 out of 4 thumbs up! "I could live off of these until I got sick of them!"

  1. Hey Lindsay, this looks so good! I'm liking your recipes because they seem so realistic. I was doing 100% whole wheat everything for a while there,but the problem was my family wasn't eating anything I made. So I'm excited to try some balance, so my family will actually eat what I make. :) Although I do have a 100% whole wheat bread recipe we all love. Anyway looking forward to trying your recipes. Also you should link you menu for the week to the actual recipe, on your site, if you have them posted. I'm sure you are still trying to figure this all out, but that would be helpful for your readers. :) take care.
