Gingerbread Pancakes

A breakfast recipe!  This week has really been more about breakfast than dinner.  But breakfast is the most important meal of the day, you know!

These were a hit at my house.  If you have a lot of eaters, or hungry eaters, or a lot of hungry eaters, I would double it!

Gingerbread Pancakes
1 1/2 cup whole wheat flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 1/2 tsp. cinnamon
1 1/2 tsp. ginger
1/2 tsp. salt
1/2 tsp. cloves
1/4 tsp. nutmeg
2 TBSP brown sugar
1 TBSP molasses
3 TBSP applesauce
1 7 oz. container Greek yogurt
3/4 cup milk (I use almond milk)
2 eggs

Mix ingredients together and cook on a hot griddle.  (The batter is pretty thick.)  Serve with maple syrup!

  1. My family loved these! The only thing I would change is using less cloves and ginger. Those spices are so strong to me. Thanks for the recipe.
