Cinco de Mayo


Hola! Puedo escribir este post en espanol para celebrar este dia tan importante pero...

No, it's just been too long.  Tonight I did attempt to teach the kids some words en espanol.

Carne Asada  and sandia (the first of the season! Google it if you need to.)   Yum!  I used to eat carne asada a lot when I lived in SoCal for a few years.  This recipe didn't taste quite as authentic, but it was still dang good!  So, find a reason to have a fiesta and make these things!

Carne Asada Tacos from For the Love of Cooking
1 1/2 to 2 lbs. flank steak
1/3 cup vinegar
1/2 cup light soy sauce
1/2 cup olive oil
1 tsp. cumin
1 tsp. black pepper
1 tsp. salt
1 tsp. garlic powder
1 tsp. chili powder
1 tsp. paprika
1 tsp. onion powder
1 1/2 tsp. oregano
Juice of 2 limes
4 cloves of garlic, minced

In a gallon size ziplock bag, mix all ingredients together and marinate steak at least 6 hours, or overnight if possible. Grill steak until done.  Let it sit 5 minutes,then slice and serve with corn tortillas, fresh guacamole, salsa, fat-free sour cream and Mexican cheese (Cojita--not that "shredded fiesta blend".)
