Tonight as I put dinner on the table, all four of my kids burst into song. Apparently there must be a whole Phineas and Ferb episode dedicated to meatloaf.
I put this together while I was on the phone
venting to chatting with my sister, so hopefully I will remember what I put in it. It turned out really well!
Stuffed Turkey Meatloaf
1 1/2 pounds ground turkey
1/2 cup quick oats
1 TBSP Worcestershire sauce
1 egg
1 tsp basil
1 tsp oregano
1 tsp garlic powder
1/4 cup Parmesan cheese
salt and pepper
1 small can tomato paste
1 small container plain Greek yogurt
1/2 bag frozen spinach
6 oz. Queso Fresco (crumbling Mexican cheese)
Mix together all ingredients through tomato paste. In a separate bowl, mix yogurt, spinach and Queso Fresco. Put 2/3 of the meat mixture into a sprayed loaf pan. Make a long indentation through the middle. Stuff the cheese/spinach mixture into it. Top with the rest of the meat mixture and seal together. Bake at 350 for 55 minutes.
