I think we are finally on the up and up. No vomit for a whole 4 days now, so we are all breathing easier. That was a bad stomach flu. Although it did have some upsides. Ryan lost 8 pounds. EIGHT. POUNDS.
In celebration of our health (and really, just as a means of escaping the madness that is my house at 5pm), I went running with a friend this evening. We did 5.5 hilly miles and it felt great. I love this time of the year--the weather is usually incredible and it stays light in the evenings. Perfect to be outside!
Now for a yummy breakfast...
These things made my house smell incredible. They were easy and yummy and the kids loved them! But really I would make them again just to get my house to smell like that!
Apple Pancake Rings
1 cup Bisquick Heart Healthy Baking Mix1 egg
1//2 cup milk
1 tsp. pumpkin pie spice
2 medium apples
Mix up pancake batter. Core and slice apples. Using a fork or a toothpick or your fingers, dip both sides of the apple slices in the batter, then cook on a hot, sprayed griddle. Serve with maple syrup.
