Blueberry Creamy Dreamy Bars


I haven't posted a recipe in forever, mainly because I haven't been cooking much!  With my kids home and our summer schedule so packed, I pretty much rely on quick easy meals--a lot of grilling and not much planning ahead.  Sorry!  But I did type this one up a while ago, so I'll share it today!

Holy Cow, these things were good!!!  Like, lick the pan clean and wish you had doubled the recipe kind of good.  The kids couldn't get enough of them and between the four of them (and some help from me) we finished off a 9x13 pan for breakfast!

You could probably use all different kinds of berries, too.  Oh, the possibilities are endless!  This is definitely a keeper recipe.  Might even become a weekly ritual... Don't say I didn't warn you.

(Don't feel overwhelmed by the long list of ingredients.  It. is. worth. it.)




Blueberry Cream Bars

Crust/Topping:
3 cups quick cooking oats
1/2 cup white flour
1/2 cup wheat flour
1/2 cup honey
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
3/4 cup applesauce
2 TBSP butter

Cream Filling:
1 8 oz. package fat-free cream cheese, softened
1/2 cup fat-free sour cream
1/3 cup sugar
1/3 cup honey
2 eggs
2 tsp. vanilla
1/4 tsp. salt


Blueberry Filling:
1 12 oz. bag frozen blueberries
5 TBSP sugar
4 tsp. cornstarch
4 tsp. lemon juice


Preheat oven to 350.  Spray a 9x13 inch pan.  In a large bowl, mix together all ingredients for crust EXCEPT applesauce.  Remove one cup and set aside.  Add in applesauce to remaining mixture, stir it up and press into pan. Bake 12minutes.

Creamy yumminess:  Mix up all ingredients well and pour over baked crust.

Blueberry layer: In a small saucepan, combine all filling ingredients and cook over medium heat for7 to 10 minutes.  Pour over creamy layer.

Topping:  Cut butter into reserved crust mixture and sprinkle on top.

Bake for 30 minutes and let cool completely on a wire rack.  Store in the fridge.  This is supposed to serve 24.  (Um, please let's not do the math to see how many servings my kids and I each ate for breakfast!!)
