Snack, Dessert, Breakfast, Oh my!

I'm sitting here icing my knee again--I'm loving this fancy machine Annie lent me!  I called a physical therapist that specializes in athletes today, so I'm anxious to see what he has to say!  The pain hasn't changed at all, unfortunately.  Even though as I did Yoga this morning I focused on "releasing my pain." 

So here is a fun recipe...made months ago when I actually had time to spend in the kitchen!!  Your kids will love it!


I really don't know how to classify these things!  I originally made them for an after-school snack, but think they could be a dessert, too.  And with all the cereal in them, they could possibly be for breakfast, too!  However you decide to serve them up, they are really tasty and relatively healthy, as well!

Sweet Peanut Butter Cereal Bars from Joy of Kosher
4 cups Chex cereal
2 cups Honey Nut Cheerios
2/3 cup sunflower seeds
1 cup honey
1/2 cup brown sugar
1 tsp. cinnamon
1/2 tsp. vanilla
1 cup peanut butter

Spray an 8x8 inch pan.  Lightly crush Chex cereal in a ziplock bag.  In a large bowl mix cereals and seeds.  In a sauce pan over medium-high heat, cook honey, brown sugar, cinnamon and vanilla to boiling, stirring occasionally.  Remove from heat and add peanut butter.  Pour over cereal and stir to coat.  Press into pan and refrigerate at least one hour.
