I promised Lincoln we would do a bike ride today and that kid is like an elephant--he never forgets! (That is elephants, right?) Anyway we headed out after lunch and it was HOT. On one of our monstrous hills I said something about it being hard (going up, on my 7,000 lb. mountain bike, pulling Link's bike and him...) and Lincoln said, "Why do you think it is hard? I'm doing all the work!" Oh, glad you think so little buddy.
Breakfast for tomorrow was a request from the kids--Pumpkin Poppers. I have made them before and they are tasty little buggers. Someone once asked me if one of the ingredients is crack. I altered them today so that they are more "clean." The one I tasted was still yummy--not so much the sugar encrusted spice doughnut it used to taste like, but still good. Here is my recipe.
Pumpkin Poppers adapted from Domestically Speaking
3/4 cup whole wheat flour
1 cup white flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. allspice
1/8 tsp. cloves
1/3 cup applesauce
1/2 cup honey
1 egg white
1 tsp. vanilla
3/4 cup pumpkin puree (canned or real)
1/3 cup milk
butter
cinnamon
Mix all of the ingredients up to (an including) the milk in a bowl. Scoop mix into sprayed mini-muffin tin. Bake at 350 degrees for 9 to 12 minutes. Let cool for a few minutes, then remove from pan. While still warm, spread butter on top and sprinkle with a bit of cinnamon. Enjoy!
