To Die For Banana Bread and school lunch ideas



I came home from our trip to find that our bananas had taken a turn for the worse.
That one on the right is frozen, not moldy.  I promise.

What could I do but make banana bread?  But not just any ordinary banana bread...
Really, really good banana bread.

This recipe is adapted from Our Best Bites, who adapted it from Cooking Light.  I'm wondering what they did, because there is nothing light about the version that I adapted.  But I tried to health it up a bit--cut the sugar in half (with all those bananas and coconut I didn't think you needed SO much sugar!) and used egg whites.  I cut the butter a bit and used applesauce as well.  Let me tell you it was fabulous--moist, banana-y and delicious!!  Dangerously delicious!  Here is my escape plan--if you have to eat one piece, have your toothbrush ready so that you can run and brush your teeth before you are tempted to shove the entire loaf in your mouth.  Sound good?

Okay, let's do it!

Coconut Banana Bread with Lime Glaze

1 cup white flour
1 cup whole wheat flour (you can use all white if you want!  I won't think you are a racist.)
1/2 tsp. salt
1/2 cup sugar
3 TBSP real butter, softened
1 TBSP applesauce
2 egg whites
1 1/2 cup mashed ripe bananas (about 4 large ones)
1/4 cup fat free sour cream or plain yogurt (I used Vanilla yogurt and it works, too!)
3 TBSP skim milk
1 tsp vanilla
1/2 cup coconut

Topping: 2 TBSP coconut
Glaze: 1/4 cup powdered sugar whisked together with 3/4 TBSP lime juice

Preheat oven to 350 degrees.

Whisk flour, baking soda, salt and sugar together.  Add butter and eggs and mix.  Then add banana, sour cream or yogurt, milk and vanilla.  Beat until blended.  Stir in coconut.

Pour batter into 9x5 sprayed loaf pan.  Sprinkle additional coconut on top.

Bake for 1 hour.  After about 40 minutes cover with foil so that the coconut doesn't get too brown.  Remove from oven.  Let cool in pan for 10 minutes, then take it out of the pan.  Drizzle glaze over the bread, then ENJOY!!




And, just because I love to get other people's school lunch ideas, I will share another of mine.  Here is what the girls had today...

Low-fat vanilla yogurt with granola, carrots and hummus, really tasty grapes and a little cheese circle.

And the training continues--ran about 3 miles today so I'm icing while I blog.  I wish that was as tasty as it sounded.

  2. That banana bread has long been one of our favorites. I never tried the OBB version but I think I might have to give your healthier one a whirl!
