Banana Bread FAIL.

For every successful recipe transformation, there are at least a few dismal failures.

I was so excited to see a recipe for "Clean" Banana Bread in my new clean recipe books.  Banana bread is a staple at our house--we have it at least once a week, and I have many different recipes that I rotate through.  I got out the supplies and started following the recipe as it was written.  The whole time I was making it, I kept thinking, "This can't be enough flour."  I checked and  re-checked what was written. I decided not to second guess the recipe and just go with it.

The banana bread turned out fine.  If you like banana-flavored gelatinous sludge.

No, really.  It tastes great.  We are just having a few texture problems.

I tried toasting it, but since it is basically the texture of wet bread, that didn't work out too well.  And now my toaster is making really weird noises.

Then I stuck the rest of the loaf in the oven to try to bake it longer.  That didn't seem to be working, either, so I sliced it up and tried baking it in individual pieces.

Breakfast, anyone?

I think the dog is the only one interested.

I should have trusted my instinct.  I won't give up on this recipe--it really does taste good, you would never know that there is no sugar.  But it does make me wonder--did anyone test this recipe before they published it??

In completely unrelated news--look at Isaac fly over the hurdles at his last track meet!  I don't know about his technique, but he looks good to me!
