Orange Cream Cheese Bread


This breakfast was a hit!  The original recipe was not healthy.  At all.  More like a dessert, really.  It also called for making into 2 loaves, which I did, but would not do next time.  I'd rather have a nice big fluffy loaf than two short stumpy loaves.  So here is the recipe!

Orange Cream Cheese Bread

1 8 oz. package fat free cream cheese, softened
1/2 cup applesauce
1 cup honey
2 eggs
1 cup whole wheat flour
1 1/4 cup white flour
1 tsp salt
1 TBSP baking powder
1 cup fat free milk
2 TBSP orange zest
juice of 1 orange

Combine cream cheese and applesauce.  Add honey and eggs.  Add dry ingredients, milk, orange zest and juice.  Mix well.  Pour into greased loaf pan.  Bake at 375 degrees for about 55 minutes.  Let cool in pan for 10 minutes.

  2. All I can say is you are my hero!!! You do so much more than the "normal" Mother. Maybe your friend is right. I always say "I am a Jack of all trades and master of none". I am happy that I can do so many things, and ok with that they are the best I can, even if that means they are not perfect. Balance is the key and I think that is what to strive for. Luv you and you are such a role model. Luv all the recipes, you and Megan take the bad out of recipes, which I like. Thanks!
