Friday Night Game Night got a little rowdy at our house this week and I ended up tweaking my ankle a bit during a Just Dance marathon.
That didn't stop me from mass producing food--I love feeling prepared for the upcoming week! I made some energy bars,
homemade Lara bars,
about 1500 cookies (not healthy--for a PTO meeting on Thursday),orange cream cheese bread and cranberry oat and honey bread (upcoming breakfasts...)
and dinner.
Dinner was concocted using this mystery vegetable we have growing in our garden. It was supposed to be spaghetti squash but it doesn't look like any spaghetti squash I have ever seen!
I partially cooked this strange gourd in the microwave, then filled it with cooked turkey sweet Italian sausage, diced cherry tomatoes (from the garden), fresh basil (from the garden), one small can of tomato sauce and mozarella cheese. I baked it for about 30 more minutes and then served. Super-yummy!!!! The kids were skeptical, but they ended up liking it too!
On Saturday we went on a quick, five mile family bike ride in which I fell. Right on a busy street. Let me tell you how thrilled I was when some kind citizen pulled over, got out of the car and asked me if I was okay. Mortified. After we got home I changed and ran the 5K loop by my house. It was HOT.
The rest of the day I spent cleaning and then transforming myself into a 1940's diva for a night on the town.
Today we continued with our baking theme and Isaac even got involved in creating an after-church treat for everyone (except me.)

I am excited to spend a fun day with my family tomorrow--we are going on a fun hike that we haven't done in a few years!
